A Peanut Butter Fudge Pie Recipe

A couple of different people asked me for this recipe so I thought I would post it on my blog so that anyone that would like could make it. :)  I hope that you all enjoy it!!!!

Peanut Butter Fudge Pie!!!

You can skip making the crust and just use 2 pie crusts (preferably 8 inch deep dish)

Pie Crust:
Makes two pastries
2 cups all-purpose flour
1 teaspoon salt
3/4 cup shortening
5 to 6 tablespoons cold water
1. In a medium bowl with fork, lightly stir together flower and salt.
2. With pastry blender or 2 knives used scissor fashion, cut in shorting until mixture resembles coarse crumbs.
3.  Sprinkle in cold water, a tablespoon at a time, mixing lightly with a fork after each addition until pastry just holds together.
4. A With hands, shape pastry into a ball. (If it is a hot day, wrap in waxed paper and refrigerate 30 minutes.)
5. For a 2 pie crusts, divide pastry into 2 pieces, and then gently shape each piece into a ball.
6. On lightly floured surface with lightly floured stockinette-covered rolling pin, roll into a 1/8 -inch-thick circle, 2 inches larger all around than pie plate.
7. Roll half of circle onto rolling pin; transfer pastry to pie plate and unroll, easing into bottom and side of plate.
I usually skip the rolling part and just press it into the pie plate. :)

Fudge Pie Filling:
¼ cup cocoa
¼ cup flour

1 cup sugar
 2 whole eggs
 1 t. vanilla
1 stick butter
Combine cocoa & flour, add sugar. Add remaining ingredients and pour into 2 unbaked shells. (It will only fill the shell about half way, remember you are going to add Peanut butter filling on top.) Bake at 300F for 25 to 45 minutes or till it is dry and cracked on top and is not longer "jiggly". ( Sorry :( I can't remember how long I cooked it. Though I know that it was longer then 25 minutes.)
While pie is cooling make the:
Peanut Butter Pie Filling:
4 T. peanut butter
1 ½ cup milk
4 T. flour
¾ cup sugar
Pinch of salt
3 eggs –yokes separated
1 t. vanilla extract
1/3 stick butter
Melt Peanut butter and milk over low heat. Add 3 egg yokes. Mix flour, salt, and sugar together and add to peanut butter mixture and cook until thickened. Add vanilla and butter. Put  half on top of the each fudge pie. You could top with meringue or whipped topping but it might taste disgusting, :D The best thing to do is leave it plan and ENJOY!!!!!

Zach's Birthday and the 2 girls who stole my heart.

So I promised pictures of Zachary's birthday and though I know that most of you may not care about it, it is my blog so I will post them. :)
First a little history: When Zachary was almost 2 years old his mother (Karen) was diagnosed with stage 4 breast cancer, and they said she only had months to live. At the time my sister was helping with the children (there were 5). Then a few months later I started to help taking care of them. When Zachary was 4 Karen died. About 1 1/2 to 2 years after Karen went home to be with her Lord, Darren her husband married Melissa. Melissa was a widow with 3 children. So began there lives together. So maybe you know now why Zachary is SO dear to me and that is why on his 9th Birthday I just HAD to throw him a small family party while he parents were out of town.
So here it is: Zachary's 9th Birthday. :)
For his birthday Zach asked me to make a couple of things. For breakfast my ninety-minute-cinnamon-rolls, and for dessert we made chocolate and peanut butter pie. Rachel was a GREAT helper in making the cinnamon rolls, the pie crust, and the chocolate part of the pie. And Zach helped with the peanut butter part.
My 2 helpers. :D

I am sorry to say that I forgot to take pictures of the cinnamon rolls.
BUT I did get pictures of the pies.
The pies.

Zach's birthday decor.

Opening his gift from me, and also one from Annie.

His gifts from me (the pie and the striped bag) and the card that I made him.

And that is all for Zachary's birthday.

Now to the girls who stole my heart.

Are they not the CUTEST?!!! They stole my heart and took it to Southeast Asia with them. I can't WAIT to see you girls!!!!

Till later....

Babysitter/Nanny

So this week I am Babysitting 7 of my friend Melissa's 9 children. Right now 4 of them are watching The Dick Van Dike show, and the other 3 are in bed. It is going to get quiet soon. :) YAY!!!! It is been a great week so far, with my sister and mother coming over for lunch today.

So this is my bedroom, the game/play room, the movie room, and the list could go on. :D
P.S. This is in the basement. :D

Now here are a few pictures of the children.

Zach and Annie doing school.

Zach's school tower.

Annie's school tower.

Rachel reading in her parents room while Isabella is taking a nap.

Zach and Eli watching Mathew playing on my computer.

Eli showing me his new guitar.

Noah building an airplane.

The next 4 pictures are of Isabella eating a snack right before going to bed.
She looks JUST like her mother.

Isabella had just gotten up from her nap and decided that she needed her favorite person. (Rachel)
So Isabella would not stay in the room with me alone without crying. and then she did.
 SO, I memorialize it. :D

Well that is all for now. :D
I hope that you all have a great day!
Till later...

VBS Pictures

VBS went GREAT. :) The theme was Creations/Beginnings. Though we did not get as many children as we have in the past it was enough. Through all the week I had 18 students come, though not all in one day.  The most I had n one day was 17. Oh and a BIG thank you to my three helpers. I could not have done it without them all.

15 of my 18 5 and 6 year olds.

There were 4 stations that we went to, Games, Crafts, Bible, and Snack. After that we all gathered and listened to the missions story.

Games. Playing "Duck Duck Goose" because of bad weather.

Craft, Making crowns.

Waiting patiently to go to snacks.

 Snacks.

Bible.

And last but not least Missions.

And to top the week off we had a program on Friday night for which I made a cake.
Guess what the theme for the cake is/was.....

Till later this is Lidia signing off. :D

What to do?????

I have been thinking and I decided that it is time for another blog post. But what to blog about???? That is when I remembered that I had not done a picture update in a while. So, that is what I will blog about today. That is if I have the time. :)

So here is what I have been up to.

After Maria's piano class we went to a friend's and swam in their pool.

Samuel is now 18 and graduated from Mi Casa Academy.
So for his birthday and graduation party we had some friends over and played some games.

After the activities above Samuel was given his diploma, then we took a group picture.

After that we ate, played games, and fellowshipped.

I had a babysitting job last week and on the way there the sunrise was SO pretty I just HAD to take some pictures. These were the two best. :D

Well, that is all for now. :)
'Til next time this is Lidia signing off. :D

Just another day in the lives of the M. Family

I was awoken this morning by my Abuela calling my name. The fact that she lives next door and not in the house crossed my mind as I got up from bed. I stumbled over to my bedroom door where she told me that someone was in her house banging on her bedroom door. At first I was not sure that she was even awake, she walks in her sleep some times and I thought that maybe she was just dreaming. But she was awake. I then saw that all the lights were on in her house and I thought, I need to get Papa or the boys to go check it out. But it was only 6:45 and I did not really want to waken them. That is when I remembered that Papa was supposed to take Abuela to get a radiation treatment at about 7:30, and I decided that I could go get him up. I went to his room and he was not there. I then checked and saw that his car was still in the drive. That is when I put 2 & 2 together and called my father to find that it was HIM, he was the one banging on Abuela's bedroom door trying to get her up to go to the Doctors. When she heard him banging she opened her window and jumped out and came to our house for help. (a side note: the window is about 6 feet from the ground, and my Abuela is only about 4'5", also she is 82 and just had an operation in the past month and is going through cancer treatments). My father, not getting a response from Abuela, busted open the door to find her not there. That is about the time I called him and told him that Abuela was with me. He knew that she had not gone past him and he checked the window. To say the least he was a little upset. But all in all every thing turned out well, Abuela is not hurt, the door will not need any work, and I was able to get another 1 1/2 hours of sleep before I went to the gym.

SO there you have it, this is what happens when you put an old crazy Cuban woman in a tough situation.

Just another day in the lives of the M. family.
Very Happy

Till next time......
